Last night I took some of the leftover pork tenderloin and make pork fajitas. pork, sweet peppers, onion, garlic, taco seasoning.

nice!! Whats the recipe for the buns?

Recipe says to roll into a ball, next time I’m gonna roll them in a ball and squish them a bit, they came out a bit tall

Since i am working from home now, i get to do a lot more cooking. breakfast is usually just 2 eggs and toast, but once in a while my son has a good request lol.

cheese and sausage omelet, with Chipotle Tabasco (not a fan of regular Tabasco, but this Chipotle is the awesome)

Original dinner didn’t pan out so threw something together quickly. Butter garlic chicken tenders ( butter, garlic, s&p, paprika, Italian seasoning, deglazed with white wine), homemade Mac n cheese and green beans

The other night we had Joe (not sure why its called Joe, but that's what the cookbook says lol)

its really simple, really tasty, and healthy too.

1 pound beef or sausage
1 bag frozen spinach
6 eggs
3 T garlic
couple shakes of dried onion flake or you could use fresh onion
white cheese (your choice mozza, feta, parm)

brown the meat, heat the spinach and squeeze as much liquid out as you can, scramble the eggs. when the meat is done, add the onion, garlic, spinach, and eggs. stir until eggs are cooked, sprinkle with cheese, serve when melted.

Made salsa verde and red rice tonight.

Served the rice with avocado and salsa verde. Tasty...
